Peter Fryer is a Professor of Chemical Engineering, and also Head of the School of Chemical Engineering at the University of Birmingham.
His research interests are to apply the principles of chemical engineering to the problems of the food industry. This is an industry different from conventional process industries in that product safety and hygiene are crucial and that the material texture, taste and structure matter greatly — think how chocolate changes in your mouth, for example, or how biscuits change through dunking!
His team are currently engaged on a £3.6M project supported by Cadbury, Unilever, Scottish and Newcastle Brewery, GSK, Bruker, Ecolab, Alfa Laval and GEA to design ways of cleaning plant which is more environmentally friendly.
He is among the first group of people to take part in the New Optimists Forum.
